Lees can be undesirable in a finished wine, but inefficient filtering can cost the winemaker. With some lees being comprised of up to 80% juice, proper lees filtration can significantly improve volume recovery.
Our rotary drum filter recovers wine from lees by scraping a pressed lees ‘cake’ through fine cutting passes in the drum. By applying suction to the drum, we can retrieve released juice without allowing the solids to return to the wine.
